Scandinavian Apple Cake by JeanneR

This one I've had for years and it's called "Scandinavian Apple Cake.
"This is the type of cake that may be eaten with fingers, is great with coffee, and can be nibbled on all day. Make it a week or so ahead, wrap in plastic and refrigerate. It will mellow and develop excellent flavor. Since it falls together so easily, make several extra cakes to freeze. It will keep, frozen for about 3 months." .
Makes two cakes, each 6 servings:
  • 4 large, tart apples, peeled, cored and chopped. (If possible Cox Pomona or Särsö)
  • 1 cup sugar
  • 1 cup chopped nuts
  • 2/3 cup melted butter
  • 2 eggs, beaten
  • 2 teaspoon vanilla
  • 2 cups sifted flour
  • 2 teaspoon baking soda
  • 2 teaspoon cinnamon
  • 1 teaspoon cardamom
  • 1/2 teaspoon salt
Do the followingr:
  1. Preheat oven to 350 degrees (F).
  2. Grease two 8 or 9" square cake pans.
  3. Combine apples, sugar, nuts and butter in large bowl. Stir in eggs and vanilla. Sift together dry ingredients and add to apple mixture, stirring only until blended.
  4. Divide the batter between two pans. Bake 45 to 50 minutes, or until tester comes clean.
  5. Cool completely on cake rack, wrap well and refrigerate. Serve at room temperature.

First of all, the conversions read like this:
1 Cup flour = 150 gr
1 cup liquid = 1/4 liter
1 inch = 2 1/2 centimeter

To this day I will never understand how a country like the US can still be with this antiquated system (dating from Henry the VIIIth!) when we are in the 21st century for goodness sake! We are the last ones in the whole world!
